Winemaker Dominique Hauvette moved to Saint Rémy de Provence in 1988. The first harvest was from only 2 hectares of vines, and even now there are just 16ha, from which Dominique makes a beguiling range of small batch, iconic and hard to find wines from appellations Les Baux-de-Provence and Vin de Pays (IGP) des Alpilles.
Hauvette produces mainly red wines, individually named cuvées with great ageing potential. These include the Cuvée ‘Cornaline’ a blend of Grenache, Syrah and Cabernet-Sauvignon with notes of garrigue, wild strawberry, black olive and earthy truffle. The ‘Amethyst’ cuvée is made mostly of Cinsault with aromas of fresh herbs and bright cherry fruit.
The whites include Cuvée ‘Dolia’ a blend of Marsanne, Roussanne and Clairette and the pure Roussanne ‘Jaspe’.
All the vines are farmed entirely biodynamically and the wines made with the most minimal intervention possible, using in the main concrete eggs for maturation to perfectly capture the essence of the Provençale terroir.
In 2020, Dominique Hauvette was awarded winemaker of the year by La Revue de France, which has made her wines even more sought after.
