COS, founded in 1980 in Vittoria by Giusto Occhipinti, Giambattista Cilia, and Cirino Strano, is one of Sicily’s most influential wineries and a pioneer of biodynamic viticulture on the island. The estate’s philosophy is centred on minimal intervention and a deep respect for terroir, with vineyards planted mainly to Frappato, Nero d’Avola, Grecanico, and Inzolia, alongside other indigenous varieties, cultivated organically and biodynamically.
In the cellar, COS is renowned for its use of amphorae for fermentation and ageing, alongside large neutral oak, producing wines that are pure, vibrant, and strongly site-expressive. The hallmark style emphasizes freshness, fine tannins, and a balance between aromatic lift and mineral depth.
Flagship wines include Cerasuolo di Vittoria Classico DOCG, the estate’s emblem; Pithos Rosso and Pithos Bianco, fermented in amphora for transparency and energy; and Frappato, which has become a benchmark for the grape’s elegance and finesse.
