COS, founded in 1980 in Vittoria by Giusto Occhipinti, Giambattista Cilia, and Cirino Strano, is one of Sicily’s most influential wineries and a pioneer of biodynamic viticulture on the island. The estate’s philosophy is centred on minimal intervention and a deep respect for terroir, with vineyards planted mainly to Frappato, Nero d’Avola, Grecanico, and Inzolia, alongside other indigenous varieties, cultivated organically and biodynamically.
