About the Speakers

Manon Gallet is a French sommelière based in Montmartre, Paris. After studying literature and intercultural relations, she shifted her focus to wine in 2018. In 2023, she founded Sarments to connect wine lovers with passionate, sustainable winemakers and artisans. She also contributes to Savagnin Power, an inclusive online guide to Jura wines launching in September 2025. Manon has worked as managing sommelière at Willi’s Wine Bar and Lago by Chloé Charles, and offers wine tours in French, English, Russian and Mandarin.

Phelan Burgoyne is a British wine professional based in Florence, Italy. He has run tastings and winery visits from Champagne to Montalcino and is in the process of developing his own negociant project in Tuscany. His current focus is on the wines of the Jura region of France, with an angle on low intervention winemaking and will be launching as a co-contributor Savagnin Power - a new online tool dedicated in the Jura later this year.
